White Christmas Slice

Ingredients:

  • 250g raw melted cacao butter
  • 250g melted coconut oil
  • 2 cups puffed grain eg. puffed brown rice, puffed quinoa or puffed amaranth
  • 1 cup desiccated coconut
  • 1/2 cup mixed no-added sugar dried berries such as cranberries and goji berries
  • 1/2 cup roughly chopped dried apricots
  • 1 cup sultanas
  • 1 cup flaked or slithered toasted almonds
  • 1 tsp vanilla powder
  • 1 tbsp Grainfields Protein Powder

 

Instructions:

Line a rectangular slice pan (approximately 20cm x 30cm or similar size) with baking paper, allowing the paper to overhang the sides for easy removal later. Combine the dry ingredients in a large mixing bowl, then pour over the melted cacao butter and coconut oil and stir to mix through. Spoon the mixture into the lined pan and place in the fridge to set. Cut into squares with a knife to serve.
