Cauliflower and Salmon Risotto

This recipe showcases the versatility of the humble cauliflower as an alternative to rice and tastes amazing!

Serves 4.

Note: Make the Honey, Lemon and Garlic Drizzle first and set aside to infuse before making the Risotto.

Honey, Lemon and Garlic Drizzle Ingredients:

  • 1 tblsp olive oil
  • 1 tsp honey
  • 2 crushed or finely chopped sautéed garlic cloves
  • 4 tblsp lemon juice
  • 2 tblsp your favourite Grainfields Liquid, we used Organic Lemon & Ginger

First sauté the finely chopped or crushed garlic cloves in a little olive oil. Then mix all ingredients together in a small jug.

Risotto Ingredients:

  • 1 medium head of cauliflower, chopped in a food processor to create a rice texture
  • 2 salmon fillets skin off
  • 4 cups fresh spinach, chopped
  • 1 cup vegetable stock
  • 2 large shallots, sliced
  • 1 yellow capsicum
  • 1 carrot finely diced
  • 6 cloves garlic, minced or finely chopped
  • 4 Tbsp. sundried tomatoes, packed in oil and drained
  • ½ cup grated parmesan cheese
  • 2-3 tsp fresh or dried thyme leaves
  • 2-3 tblsp fresh chopped parsley
  • Salt and pepper to taste
  • Lemon slices, parsley sprigs and Grainfields Organic Hemp Seed Sprinkle to garnish

Make it your own with variations, such as: peas, beans, tofu, cooked diced chicken etc.

Instructions:

Make rice out of the cauliflower by either grating or blitzing in a food processor and set aside

Place the 2 salmon fillets in a pan with 1 tbslp olive oil and cook for 5 or so minutes. Break into pieces and set aside.

In a large pot, pan or electric frying pan, heat 1 Tbsp olive oil on medium heat until warmed.  Place the shallots, garlic, capsicum, carrot and thyme inside and sauté for 3-5 minutes. Add Vegetable stock and cook with lid on for 5 minutes.

Add cauliflower, sun-dried tomatoes, spinach, mix through, cover with lid and simmer for 5 minutes.

Add salmon, parsley, parmesan cheese, plus salt and pepper to taste, mix through, cover with lid and simmer for 5 minutes.

Serve the finished risotto in plates or bowls, topped with the Honey, Lemon and Garlic Drizzle, a spoonful or two of the Grainfields Organic Hemp Seed Sprinkle, sprigs of parsley and a slice of lemon.
