Rum Balls

Ingredients:

  • 2 tbsp coconut oil, melted
  • 2 cups activated almonds or raw almonds
  • 1/2 cup desiccated or shredded coconut plus extra coconut for dusting
  • 8 Medjool dates
  • 1 tblsp Grainfields Protein Powder
  • 1 cup raisins soaked in a few tbsp of rum overnight and drained.

 

Whiz the almonds with the desiccated coconut in a food processor. Next, add the Medjool dates and melted coconut oil. Whiz until the dates are completely broken down and the mixture is combined. Place into a mixing bowl with the rum-soaked raisins and mix together.

Form mixture into tight balls and place in the fridge until firm.  Once firm, roll in desiccated coconut.
