Ingredients:
- 450g Kimchi chopped into small pieces plus 2 tablespoons of brine
- 3 Spring onions chopped
- 1/2 teaspoon sugar
- 1/2 cup plain flour
- 1/2 cup water
- Oil for frying
Combine all ingredients in a bowl and mix well with a spoon. Preheat and add oil to frying pan. Pour in the pancake batter to form a circle– you can make big pancakes or several batches of smaller ones.
Cook until the bottom of the pancake is crisp and golden brown then carefully turn over to cook the other side.
Serve pancakes on a platter with some soy dipping sauce
