Kimchi Fried Rice (Kimchi-bokkeumbap)

Ingredients:

  • 3 cups day old steamed rice
  • 1 cup chopped up Kimchi plus 3 tablespoons of brine juice from the jar
  • 1 Spring onion chopped
  • 2 to 3 tablespoons Korean red pepper flakes (gochugaru)
  • Oil for frying
  • Optional protein– pre cooked chicken, beef, pork or tofu

 

Preheat and add oil to frying pan. Add the kimchi and stir fry for about 1 minute. Next add the rice and all other ingredients and fry, stirring well to mix and heat through evenly. Place in bowls to serve and garnish with a fried egg and/ or nori dried seaweed strips.
