Ingredients:
- 750 grams mixed fruit
- 2 tablespoons ground almonds
- 25 grams almonds
- 125 ml Soya milk
- 175 g sunflower oil
- 2 tablespoons Grainfields liquid
- 150g flour
- 100 grams Grainfields powder
- 1 tablespoon bi-carb soda
- 1/4 cup brandy or rum.
Directions:
Preheat oven to 150 degrees Celsius.
Mix oil into the flour and stir in dry ingredients.
Add mixed fruit and almonds and mix until all ingredients are wet.
Place in a tin greased and lined with 1 piece of brown paper and 2 pieces of greaseproof paper.
Bake for approximately 2 -3 hours. Insert skewer to check when cake is cooked – if skewer comes out clean, the cake is cooked.
Pour over brandy or rum. Allow to cool.
