Go beyond activated nuts with this recipe using Grainfields liquid to partially ferment the mix, breaking down phytates and other anti-nutritional compounds naturally occurring in nuts. The good bacteria and the acids during fermentation also help break down the high protein content in the nuts making them far more digestible, while adding a slightly acidic morish flavour that you will love. No need to compromise on health and taste with this fantastic recipe.
Ingredients:
- 500mL of your favourite Grainfields liquid. From your chilled bottle, pour liquid into a measuring jug and leave to sit until it reaches room temperature.
- 200g Almonds
- 200g Pecans
- 100g Pepitas
- 100g Sunflower seeds
- 200g Cashews
- 200g Fruit mix (we used a purchased mix of prunes, apricots, apples, pear and peaches)
- 1 teaspoon of honey
Method: Have all your ingredients at room temperature. Weigh and mix nuts and seeds. Cut up dried fruit to be about same size as the nuts and add to the mix. Place the nut &fruit mix in a tall jar/jug, this will make covering it easier than using a wide bowl.
Mix a teaspoon of honey with your room temperature Grainfields liquid and pour it over your nut & fruit mix. Press the nut & fruit mix down firmly and try to have the mix covered by the liquid. Add a little more Grainfields liquid to cover if needed. Cover soaked mix with a loose lid or plastic film and leave in dark and warm area to ferment for around 24 hours (more is fine, particularly if you want a sourer taste and to further break down the protein and fats in the nuts). The nut & fruit mix will soak up most of the liquid during the process.
Sift the nut & fruit mix after fermentation is complete to remove excess liquid and dry in a food dehydrator or at low temperature in an oven. Make sure to fully dry the mix before storing to avoid spoilage.
Options: Once dry, the nut & fruit mix will have a slight acidic taste which is complemented by the sweetness of the fruit. Eat as is for a healthy snack or add a little salt to taste. You can leave out the fruit or use a different mix of nuts, the choice is yours.
